Avocado Guacamole Dip!

Who does not love Raw Fresh GUACAMOLE??  I certainly do.

When my friends and I would get together in college, we’d all chip in to buy avocados (a dollar or two per avocado is expensive when you’re broke!!), and we’d make the BIGGEST BADDEST bowl of Guacamole dip you’d ever seen.  Then we’d devour it over lunch haha!  Ohh I love avocados.  Who ever invented avocados blending together with lemons, cilantro garlic and lime is a genius.

Avocados are one of the highest protein fruits,
rich in Omega 3’s (something just about every American does not get enough of),
and packed with vitamin A, C, E, K and B complex,
not to mention that just one medium avocado contains almost half of the amount of fiber you need in a day.

Ingredients

  • 4 Avocados
  • 1 Large Tomato, or 2 Roma Tomatoes
  • 1 Bunch of Cilantro
  • 2 Tbsp Lemon Juice
  • 1 Tbsp (or more) Cumin
  • Pepper to taste (I use Cayenne and White/Black Pepper)
  • Sea Salt to taste

Instructions

There are two ways you can prepare this, one is in a food processor (a bit more liquidy), and the other is mashing it up yourself (more chunky).
I mashed the one you see in the photo above.

Food Processor: Roughly dice the tomatoes and toss every ingredient into the food processor. Blend! Add spices to taste.

Mash: Finely dice tomatoes and cilantro. Toss avocados in large bowl and mash until desired texture. Combine the tomatoes, cilantro, lemon juice, and spices.
