Raw Vegan Avocado Lime Cheesecake

Raw Vegan Avocado Lime Cheesecake

Serves: 8 Cooking Time: 4-6 Hours

Ingredients

  • WALNUT CRUST:
  • 1 Cup Walnuts, soaked
  • 2/3 Cup Pitted Dates, chopped
  • 1 tsp water
  • AVACADO LIME FILLING:
  • 2 Large Avocados
  • 8 Tbsp Maple Syrup
  • 1/2 Lime Juiced
  • Lime Zest, to taste
  • 1 tsp Vanilla Extract
  • 5 Tbsp Coconut oil
  • 4 Tbsp Earth Balance Butter
  • STRAWBERRY FROSTING:
  • 3 Cups Frozen Strawberries
  • 1/2 Lime Juiced
  • 2 Tbsp Maple Syrup

Instructions

Food Process Walnut crust into a crumble and pack the mixture into a 6"-8" pan as the base.

Blend Avocado Lime filling together into a blender until creamy and thick. Pour over the crust in the pan and set into freezer for 4-6 hours.

After 4-6 hours has completed, blend Strawberry frosting together and pour on top of the cheesecake. Set back into freezer until hardens a bit and serve!
