Who doesn’t love Chocolate Pudding!??

I know what your thinking though…uhh VEGAN chocolate pudding? You’re skeptical.  Let me reassure you, this is Way better than you fear.  It is rich, moist, chocolaty and delicious!!

If you are a new vegan or new to the raw diet, and miss the desserts you use to eat, this will cheer you right up!  It is filling and very healthy for you.  Simple as ever to make too!  I love the fact that its raw, so no need to cook anything, and it’s quick and easy to make.  Very minimal prep work, something you can make on the spur of the moment.  A quick pick-me-up. 

I imagine myself enjoying this vegan chocolate pudding on a beautiful summer day, laying out in my backyard just watching the birds fly by, and the clouds roll all of my troubles away.  I loved growing up on a farm for that reason, to be able to feel the sun on my skin, and hear the chickens clucking and walking around peacefully, or watch the sheep graze together.  Sometimes I would even see one of my dads honey bee’s on a flower next to me and feel relieved to know that we are helping the environment through breading such tiny insects.  Ahhh the country life, I miss it.  It’s a pretty simple thought, but that’s my idea of relaxation: chocolate and nature.  Not much better than that!

Vegan Chocolate Pudding

Raw Vegan Chocolate Pudding

Ingredients

  • 1/2 Cup Raw Sunflower Seeds
  • 1/2 Cup Filtered Water
  • 2 Tbsp Raw Organic Cocoa Powder
  • 1 Avocado
  • 1 Frozen Banana
  • 2 Tbsp Maple Syrup Grade B or Honey
  • 2 tsp Sea Salt
  • Coconut Shavings (for garnish)

Instructions

  1. Blend all ingredients together in your blender (I am now using my amazing Vitamix!!) until at your desired thick and creamy consistency. If it gets a little too thick and hard for the blender to blend, add some more water, or even coconut/almond milk.
  2. Garnish with coconut shavings and serve!
  3. Eat with a smile on your face 🙂
