Cheesy Vegan Broccoli & Wild Rice Casserole Dish

Looking for something vegan, warm and delicious?

This is the dish for you!  It is is a homemade cheesy vegan broccoli and rice casserole dish that is packed with a lot of different vegetables that are so healthy for you, as well as my favorite, wild rice.  I LOVE the fact that it resembles the pull-apart cheese I grew up on, and yet it’s all vegan so I can feel good knowing I’m not putting dairy in my body.  I also love that I have an excuse to eat my favorite vegetable: broccoli.  If I had to choose among all green things, broccoli would probably rule out on top.  But if that’s not for you, substitute it with zucchini, peas, cauliflower, whatever you love.  Or just add in even more carrots! You can’t go wrong with a little extra orange on your plate 🙂  BTW how often do you get to eat amazing Wild rice?  It’s for sure prettier than other kinds of rice, and I think tastier too.

Benefits of Wild Rice:

– Low in calories, fat and sodium
– Contains a healthy balance of protein, carbs and fiber
– 1 Cup has 166mg of potassium, 52mb of magnesium, vitamin B complex, and 134mg phosphorus.

This is far superior than regular white rice.  If you are trying to watch out for your carb intake, just add more veggies to this dish to help balance it out.  And if you’re trying to cut out the fat, don’t load up on the vegan cheese and you’re all set for a wholesome balanced meal!  It’s something your family ought to love, a good hearty winter recipe for the win.

Cheesy Vegan Broccoli and Wild Rice Casserole

Ingredients

  • RICE:
  • 1 Cup Wild Rice
  • 2 1/3 Cups Vegetable Broth
  • -
  • BASE STIR FRY:
  • 2 Tbsp Coconut Oil
  • 1 Onion
  • 3 Cloves Garlic
  • 2 Small Heads of Broccoli, or One Large Head
  • 2 Carrots
  • 3 Celery Sticks
  • -
  • CHEESE SAUCE:
  • 1 Can Coconut Milk
  • 1/2 Cup Nutritional Yeast
  • 2 Tbsp Dijon Mustard
  • 1 Tbsp Mustard Powder
  • 1/2 Cup Daiya Cheese (flavor of your choice)
  • Sea Salt (to taste)
  • Cayanne Pepper (to taste)

Instructions

  1. Put 1 Cup of Wild Rice with 2 1/3 Cups Vegetable Broth on to boil in a small pot. Once boiling, turn to a simmer and cook for 45 minutes.
  2. Put a pan onto medium heat with 2Tbsp coconut oil. Chop onion and garlic into small slices and toss in until slightly turning brown. Keep stirring so it does not burn.
  3. Chop broccoli, carrots, and celery into small bite sizes and toss into the pan with the onions and garlic. Mix everything together for another 5-10 minutes, or until cooked to your liking, and sprinkle with sea salt and cayanne pepper to taste.
  4. Put a small pot on medium heat. Mix Cheese Sauce ingredients together until blended well, for 3-5 minutes.
  5. Once all the steps have been completed, mix everything together into a glass casserole dish and serve!
