Serves: 4-6 Cooking Time: 1 Hour

  • RICE:
  • 1 Cup Wild Rice
  • 2 1/3 Cups Vegetable Broth
  • 2 Tbsp Coconut Oil
  • 1 Onion
  • 3 Cloves Garlic
  • 2 Small Heads of Broccoli, or One Large Head
  • 2 Carrots
  • 3 Celery Sticks
  • 1 Can Coconut Milk
  • 1/2 Cup Nutritional Yeast
  • 2 Tbsp Dijon Mustard
  • 1 Tbsp Mustard Powder
  • 1/2 Cup Daiya Cheese (flavor of your choice)
  • Sea Salt (to taste)
  • Cayanne Pepper (to taste)

Put 1 Cup of Wild Rice with 2 1/3 Cups Vegetable Broth on to boil in a small pot. Once boiling, turn to a simmer and cook for 45 minutes.

Put a pan onto medium heat with 2Tbsp coconut oil. Chop onion and garlic into small slices and toss in until slightly turning brown. Keep stirring so it does not burn.

Chop broccoli, carrots, and celery into small bite sizes and toss into the pan with the onions and garlic. Mix everything together for another 5-10 minutes, or until cooked to your liking, and sprinkle with sea salt and cayanne pepper to taste.

Put a small pot on medium heat. Mix Cheese Sauce ingredients together until blended well, for 3-5 minutes.

Once all the steps have been completed, mix everything together into a glass casserole dish and serve!
