Sliced Apple Pecan Chocolate Coconut Snack

A new simple and tasty dish of mine!  I made it this year for our Superbowl party, and everyone really enjoyed it.  I know I enjoyed leftovers;)
This is a great way to convince kids to eat a healthy desert, seeing as how it is mainly sliced apples coated in coconut flakes, melted chocolate, peanut butter if you so choose, and maple roasted pecans.  What couldn’t you love about this?  A great winter’s night comfort dish when you are curled up on the couch watching TV.  Best of all, you really don’t need to feel guilty while indulging in this.

Sliced Apple Pecan Chocolate Coconut Snack

Serves: 2-4 Cooking Time: 15 Minutes


  • 3 Apples (choose your favorite type)
  • 1/4 Cup Pecans
  • 2 Tbsp Maple Syrup
  • 1/4 Cup Chocolate Chips (I chose Dark Chocolate)
  • 1/4 Cup Toasted Coconut Flakes
  • 4 Tbsp Peanut butter (melted)
  • 1 Tbsp Lemon Juice
  • Dash of Sea Salt
  • 1/4 Cup Cocoa Butter
  • 1/4 Cup Coconut Oil
  • 1/4 Cup Cocoa Powder
  • 2 Tbsp Maple Syrup or Honey
  • 1 tsp Vanilla Extract
  • Dash Sea Salt



Slice your apples very thin and layer them out on a plate of your choosing. Drizzle lemon juice overtop immediately to keep them from oxidizing and going brown.


Pour maple syrup on your pecans and place them in the toaster oven at 300F for approximately 10 minutes (when the maple syrup gets cooked, it will harden like rock candy to anything it is touching. I use aluminum foil so they don't get stuck to the bottom of my pan, just be careful you do not peal off any foil with the pecans!). Keep an eye on the pecans while they are in there, as you do not want them to burn!


Once the pecans are done, assemble them over top of your apples, along with your coconut flakes, melted peanut butter, chocolate chips, and sea salt.


If you want to add melted homemade chocolate over top for something extra, pour the ingredients into a small glass container. Find a smaller pot to pour a few inches of water into and place your glass container on top. Slowly bring the water to a soft boil on the stove so the glass container does not warm up too quickly and crack (this way we can melt the chocolate ingredients together, without burning any chocolate as you could if you poured the ingredients directly into the pot). While warm, drizzle the chocolate overtop of your apple desert and enjoy:)
