Green Tapenade Spread

Sorry that my photo does not do this recipe justice, but it is a really yummy spread, especially for sandwiches. Nothing better than using fresh basil from the garden, delicious kalamata olives, healthy filling cashews, and detoxing parsley to brighten your day.  It is similar to a pesto, so if you want to call it that, thats fine too.

Eat this as a snack with chips at home or as a spread on toasted bread for your guests.  And I love that all of the herbs give this a really green color too, feels healthy to eat it, and it is;)

Serves: 6 Cooking Time: Nuts soak overnight, Prep time 5 minutes

  • 2 Cups - Fresh Basil
  • 1 Cup - Parsley
  • 1 Cup - Kalamata Olives
  • 1/2 Cup - Cashews (soaked overnight!)
  • 1/2 Cup - Extra Virgin Olive Oil
  • 2 - Garlic Cloves
  • Healthy dash of Sea Salt and Black Pepper

Soak your cashews overnight in filtered water and sea salt (if you forgot to do this or don't have time to do this, I read that boiling cashews in filtered water for 2 minutes also helps to soften them up and release toxins you would otherwise be eating). Strain them and rinse them clean.

Throw everything together in your food processor (I used my high powered Vitamix) and blend until you reach the consistency you like. Feel free to add more of anything to taste/texture.When finished, scoop out and enjoy:)
