Chocolate Peanut Butter Smoothie

So last week was my Birthday!!!!!

I am officially a quarter of a century old.  Gosh, I really cannot believe it.  And next year I’ll be 26….that number just looks so, old and scary.  It’s a mental thing, I wish I could just stay 21, even though I feel 18 lol.  I am understanding now how some who are even 60 say that they still feel like they are in their 20s.  I guess that’s why everybody always says ‘enjoy it while you can’.  So sad.  But I am looking forward to Heaven one day, where age will literally only be a number.

My birthday was amazing though.  Thanks mostly to my husband and my family for celebrating with me last weekend and making an AMAZING RAW Vegan chocolate cake for me (thanks Aunty Pia!!).  I received a fun birthday card from my co-workers, took a half day as my husband drove down to pick me up from work, and surprised me with Phantom of the Opera on broadway, then shopping in Time Square, then an Amazing dinner at an all vegan restaurant downtown called Peacefood Cafe!  We got SO MUCH FOOD!! It was awesome, we ordered Loaded Nachos (my fav), ‘Chicken’ Fingers, ‘Clam Sauce’ Linguini Pasta, ‘Crab Cakes’, Peanut Butter ‘Cheesecake’, chocolate ganache, and lastly a Passion fruit smoothie.  SO GOOD, we are SO going back there.
Especially after the scandal with our first ever favorite vegan restaurant, By Chloe’s.  The day before my birthday, I found out that Chloe, (the Chef of Every recipe in that restaurant, and the first vegan chef to win a culinary competition on national television), was just forced to leave her own co-owned company over ‘gross negligence’.  However, rumors have it that Jimmy Haber, the CEO of Esquared Hospitality LLC, pushed Chloe to have meat on their menu, and Chloe was not okay with having her name on a restaurant that served meat.  After allegedly suing Jimmy Haber and being threatened by him a few months back, Chloe was since let go, although the company refuses to take her name off of anything.  I am really beyond upset over all of this, and I am hoping that the full truth will come out and the one who is in the wrong will get what they deserve.

 

Anyways, to come to a close, I was craving chocolate on my birthday (big surprise lol!).  And so this drink is the result of that.  Delicious!!  Can’t wait to make it again, I would pay good $$ for this, but fortunately it is made with cheap enough ingredients so I don’t need to worry about breaking the bank to enjoy it;)

 

 

Chocolate Peanut Butter Smoothie

Serves: 1-2 Prep Time:
Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 2 Cups - Almond Milk
  • 2 Tbsp - Peanut Butter
  • 1 - Frozen Banana (if you don't have this, thats fine, refrigerate your smoothie afterwards to reach the desired temperature)
  • 1/2 Cup - Vegan Chocolate Ice cream
  • 1/4 Cup - Cocoa Powder
  • 1 Scoop - Protein Powder (I used Sun Warrior Vanilla Protein Powder)
  • Toppings - Cacao Nibs and Vegan Ice cream

Instructions

  1. Blend everything together (except for your toppings!) in a high powered blender, and blend until smooth.
  2. Pour into your favorite mug or smoothie bowl, add your toppings on top, and enjoy!

Notes

Chill if you prefer your smoothie even cooler.
