Spinach and Sweet Potato Casserole

Its been kind of rainy and cold lately.
So who doesn’t enjoy a nice warm scoop of casserole in a time like this?

This was a good dish, actually, to my surprise, my Father-in-law said he liked it better than his wife’s spinach quiches (shh!).  It’s hearty and comforting, and healthy with the use of sweet potatoes and spinach, and interesting combination.  But very delicious!

The prep work is not too bad either, the worst part is slicing the sweet potatoes with a mandolin, but once you get that finished the rest is more easy.  I used about a packet of shredded Daiya cheese inside, and then some Daiya’s cheese slices on top and cooked it until golden.  You can use whatever vegan cheese you prefer.  I used like 3 different recipe combinations to make it, and I’m pleased with the outcome.

Ingredients

  • 2 - Large Sweet Potatoes
  • 2 Tbsp - Coconut Oil (melted)
  • -
  • 2 Tbsp - Vegan Butter
  • 1 - Onion
  • 4 Cloves - Garlic
  • 1 12-16oz Frozen Package - Spinach
  • 1 8oz Package - Daiya Cheese (or Vegan Cheese)
  • 1/2 tsp - Chilli Powder
  • 1 tsp - Dried Sage
  • 1 tsp - Dried Thyme
  • 1/2 tsp - Nutmeg
  • Sea Salt and Black Pepper to taste

Instructions

  1. Preheat the oven to 400F.
  2. Wash and slice your sweet potato into thin even slices short length wise using a mandolin (watch your fingers!).
  3. Layer on the bottom and sides of a oiled down casserole dish. Try not to overlap the slices too much, but if you do a little it's not a problem. Drizzle melted coconut oil lightly overtop and bake for 30-40 minutes, or until softened.
  4. Meanwhile, defrost your package of unopened frozen spinach over hot water until softens.
  5. Chop your onions and garlic, and toss into a pan with melted vegan butter and cook until translucent.
  6. Add your spinach and vegan cheese (save some cheese to garnish on the top!), along with your spices. Mix everything together well and cook for 5-10 minutes or until the cheese properly melts.
  7. Once your sweet potatoes are nearly done cooking, take out of the oven, pour your spinach filling inside, and top with left aside vegan cheese.
  8. Continue cooking in the oven for 40 more minutes. Watch after 20-30 minutes to ensure that your cheese is not burning on top, but slightly browning.
  9. Then take out, let cool and enjoy warmed 🙂
