Loaded Baked Corn Salsa

Who loves corn! And Salsa! And Cheese (vegan cheese that is lol)!

This is a winner winner dish.  Such southern comfort food, plop it on your coffee table in front of your favorite show with friends, and munch away! At least that is what we did;P I accidentally made too much (my usual problem) and brought it out for ‘guys night’, where about 5-10 of our friends come over to watch anime, and they DEVOURED IT.  I mean it was GONE in minutes.  Nothing gets their attention off of their show, but this made them stop their show, grab a plate and lick their fingers off with this!  Haha it was the funniest thing, like a scene from a movie really.  They asked for the recipe, so I’m posting it up on my blog for them.  They keep asking when I’m going to make it again ;P  Soon soon, just need to find some more fresh organic corn on the cob to use!

A NEW MEMBER OF THE FAMILY

Today was such a rainy day.  It started off warm and sunny, and ended up in a severe thunderstorm watch lol!  Downpours and flood warnings and such.  But I am home now, listening to Corinne Bailey Rae’s ‘Like a Star’.  Tim just came inside from running, with someone very special that I’ve been DYING TO INTRODUCE YOU TO!!!!!!

Her name is Ashka, which means Blessing in Hindi.  She is my Emotional Support Animal to help me with my journey of healing Lyme & POTS.  My Dr thought it would be a good thing for me to get a dog, to help take my mind off of some of the health issues Lyme has brought on that I’m still trying to figure out (with little success), and to exercise more regularly to help improve POTS symptoms (since it is a studied fact that exercise can help POTS patients).  This kind of forces me to get out and move all year long, and the best thing about her is that she’s easily tired out AND heat intolerant, just like me (yes we ran extensive tests on her at the Vets office, $$$, but she came out healthy and clear of any diseases – which means no lyme disease, despite finding multiple ticks on her already)!   So I’ve been going on walks with her instead of running with her (since my HR goes up too fast from the POTS to run anymore :/ ).  But Tim can run, so he can tire her out faster than me.  In fact he just came in now from a 2 mile run with her!  I think Tim is also going to use her as an excuse to exercise more too.  Already the both of us have gotten in a lot more steps than we normally would and gone out in nature more than we usually would either.  It’s not going to be fun in the winter time though, but I’m taking it one day at a time.
It was a HUGE hassle getting permission from my landlord to allow us to have her with our no-pet lease.  It took over a month conversing with the landlords Attorney back and forth, and to my surprise, they even tried demanding me to sign over my entire medical records of my entire life (HIPA form) or else they threatened my denial of my application….which is an ILLEGAL request on their part to ever ask.  All they need by law is my Drs letter, but perhaps they wanted to intimidate me?  It was a very frustrating process, but I was praying the Entire time through it that God’s will be done, and they have granted me permission to keep her so long as my medical condition deems it necessary (well seeing as how I’ve had Lyme disease and POTS for 3 years now and I’m still not 100%, looks like I won’t be having a problem for a few more…then theres always the option of moving lol).  This must be Gods will after all, right?  Regardless, this experience with our 6-10 mo old adopted Siberian Husky sure is going to teach us patience and greater responsibility, as she is a TRUE husky, stubborn in nature!! But she is sweet, friendly, beautiful, and fun to be around.  I could talk about her for hours on this post, but I guess I should save that for some of my future posts ;D

Loaded Baked Corn Salsa

Ingredients

  • 3 - Large Ears of Corn (Organic!)
  • 1 Tbsp - Melted Coconut Oil
  • 2 - Roma Tomatoes (diced)
  • 1/2 - Bell Pepper (sliced, *optional)
  • 3 Tbsp - Vegan Mayonnaise or Mayo
  • 2 Tbsp - Vegan Butter
  • 1 Jalapeno - Sliced
  • 1 Lime - Juiced
  • 1 Cup - Daiya Cheese (or other Vegan Cheese)
  • 1 Tbsp - Cumin Powder
  • 1 Tbsp - Paprika Powder
  • 1 tsp - Black Pepper
  • 1 tsp - Red Pepper Flakes or Cayenne Pepper
  • Sea Salt to taste
  • Handful - Chopped Cilantro
  • -
  • Tortilla Chips!

Instructions

  1. Preheat your oven to 350F.
  2. Warm up your corn on the cob in the microwave for 3-5 minutes each. Be careful taking it out, it is hot!
  3. Remove and let cool, then with a knife, cut off the corn into a casserole dish lined with coconut oil.
  4. Add in the rest of your ingredients (except for the cilantro) and mix together thoroughly. You can add extra cheese on top for baking.
  5. Place your casserole dish into the oven for 15-20 minutes. It might come out a little watery when warmed, but once it cools down the liquid gets soaked up a little more.
  6. Garnish with cilantro, serve with tortilla chips and enjoy!

Notes

Keeps well in the fridge, just heat it up in the oven when you want to eat it again in a large batch, or warm in the microwave for smaller amounts.
