Easy Cajun Baked Tofu

I found this recipe off of VeganRicha when I was looking for an easy tofu meal to make last week.  I learned after getting out of the hospital and eating really bland foods, that tofu actually tastes very good even when cooked simple.  I was eating just tofu, soy sauce and salt for breakfast for like 2 weeks straight, they even made it for me in the hospital.  So I have really gained an appreciation for simply baked or fried tofu.

For this recipe, I baked everything after letting the spices marinate into the tofu for 30 minutes.  I think next time I will fry it though because I felt tofu comes out a little juicier that way, plus I enjoy adding the coconut oil flavor to my food!

Easy Cajun Baked Tofu

Ingredients

  • 1 Packet - Extra Firm Tofu
  • -
  • MARINADE:
  • 2 Tbsp - Cajun Spices
  • 1 Tbsp - Lime (juiced)
  • 1 Tbsp - Olive Oil
  • Sea Salt to taste
  • Optional - Cilantro to garnish

Instructions

  1. Open and rinse off your tofu. Squeeze gently to remove excess water (be careful not to let the tofu crumble, you want to keep the shape in tact), and wrap in a dry towel to remove excess moisture. Let it sit on the counter in the towel while you mix your marinade (you can place something heavy on top to help squeeze out the liquid).
  2. Mix together your marinade ingredients into a saucy paste.
  3. Unwrap your tofu and slice into 1.5cm wide slices, or however you want to cube them up.
  4. Add to a long container and paint 3/4 of your marinade on top of each slice, being sure to get each side coated all around. Save the 1/4 marinade for baking. Place in the fridge for 30min-1hr (the longer it sits, the more flavor will seep into the tofu).
  5. Preheat your oven to 350F.
  6. Remove your tofu, toss onto a sprayed down parchment paper lined cookie sheet, and drizzle your remaining marinade on top of each slice.
  7. Bake for 35 minutes, flipping mid way.
  8. Once your tofu is cooked to have a little bit of crisp on the outside but soft on the inside, remove from the heat and let it cool.
  9. Enjoy with some steamed white rice or seasoned fried rice, and a side of veggies!

Notes

Best served with a side of veggies and grain like quinoa or rice.
