Do you love pesto? Because I certainly do.
No this is not quite pesto, but it is similarly delicious, and also very similar in ingredients. I can make this in less than 5 minutes it is that easy, if you have a food processor or a blender this won’t be any problem for you either. And it is so versatile! I imagine this would taste amazing dipped with some freshly baked Italian bread like my Nonna use to buy for us. I served this for company as a snack to spread over toast and all of my guests ate more than I had originally put out for them, in fact one of them even took more and spread it over his pasta as a sauce. For breakfast I spread this on 2 slices of bread with daiya cheese and sliced tomato in the center, kind of like a panini. So there are lots of options here:)
If you can’t tell by the title, the main ingredient of this recipe is Cilantro. This herb is almost like a little super herb because of its healing properties. The one thing I know it best for is its heavy metal detoxing effects. Sounds kind of crazy, at least it did to me when I learned about it, but cilantro has actually been studied and proven successful in reducing the amount of heavy metals in people with higher than normal levels. Somehow compounds in cilantro bind to these toxic metals and helps to carry them out of your system. In fact, when I was living in Michigan, I was tested for heavy metals and my results showed that I was consuming lead on a regular basis from the water! So if you are currently living in an area with lead contamination in your tap water too (and you are not using a strong filter like a Berkey), this is a great herb to incorporate into your diet.
I recommend getting a high grade Olive Oil (our second main ingredient) to keep in your kitchen for future recipes. This is the one my parents buy and it is by FAR the most fragrant and flavorful olive oil I have ever had, it smells like freshly crushed olives whenever you open the bottle! And it is organic, so it is a bit pricy, but it is sold here in bulk so it should last you a long time.

Cilantro Dipping SaucePrint Recipe
- 1 Bunch Cilantro
- 1/2 Cup Olive Oil
- 2 Lemons
- 4 Garlic Cloves
- White or Black Pepper to taste
- Sea Salt to taste
Chop up your cilantro so it is easier for your blender/food processor to blend.
Throw all of your ingredients into your blender/food processor and process until you get the consistency you desire, be it chunky or smooth.
Eat right away or store in the fridge (up to 5 days) for a later use!
Serve over bread, pasta, etc:)
