Veggie meatloaf! Okay so it’s not the real thing, and I cannot convince you that it tastes like the real thing because it does not. But never the less, it is a healthier alternative for regular meatloaf, and has it’s own distinct flavors. Once again, my Aunty Pia made this and shared it with us over the thanksgiving dinner table. We had a beautiful time together over my grandparents house for thanksgiving with the family. We had sooo much food it was ridiculous, my Aunt this year made 75% of it, I made 20% and my Uncle brought a real turkey so that is the last 5%. I just hope we can eat all of the leftovers we packed before it is too late!
So anyways, back to the meatloaf. This was very good, especially with gravy on the side. My Aunt followed this recipe on ConnoisseurusVeg.com, so this is their recipe I am sharing with you today. I hope you give it a try!
Veggie Chickpea MeatloafPrint Recipe
- 2 - 14oz can of chickpeas
- 1 Onion
- 2 Celery stalks
- 2 Carrots
- 4 Garlic Cloves
- 2 Cups - Gluten Free Breadcrumbs
- 1/2 Cup - Almond Milk (unsweetened)
- 3 Tbsp - Vegan Worcestershire sauce
- 2 Tbsp - Soy Sauce
- 2 Tbsp - Coconut Oil
- 2 Tbsp - Ground Flax Seeds
- 2 Tbsp - Tomato Paste
- Salt to taste
- Pepper to taste
- MAPLE GLAZE:
- 1/4 Cup Tomato Paste
- 2 Tbsp Maple Syrup
- 2 Tbsp - Apple Cider Vinegar
- 1 Tbsp - Soy Sauce
- 1 tsp - Paprika
Preheat your oven to 375F.
Place all of the meatloaf ingredients into your food processor or high powered blender and pulse until everything turns into a mixed together crumble. Be sure to work in batches so everything gets evenly chopped and transfer to a large mixing bowl. Be careful not to over-blend into a creamy paste!
Oil a 9" loaf pan all around and press your mixture crumble evenly and firmly inside.
Bake for 30 minutes.
Create your Maple Glaze by stirring together all of the ingredients into your mixing bowl until everything blends together.
Pour your glaze on top of your meatloaf at the 30 minute mark. Then put back into the oven and bake for another 20-25 minutes longer.
Poke a toothpick inside when the time is up to ensure that the inside is not still super moist but has been cooked through.
When complete, remove from heat and allow to cool or half an hour until serving.
Tastes excellent when served with vegan gravy or ketchup! Optional - You can add chopped parsley, cilantro, mushrooms, etc in this dish too:)
