Not to mention this recipe provides nutrition from the unique ingredients found in this cheesecake, such as avocado, dates, walnuts, etc.

How is cheesecake healthy?
Some Fun Facts about the Avocados in this recipe are that they contain more potassium than a banana, they have 26% of your daily dose of Vitamin K, and they are rich in fiber, specifically the soluble kind, which are known for feeding healthy gut bacteria! The crust on this cheesecake is made up almost entirely of walnuts (if you want to read more about the AMAZINGNESS of walnuts, check out my recipe here), but if you can’t do that, you can try cashew nuts or almond flour instead.
Super bonus if the berries you are using are in season at the moment! Then you can source local fresh and raw toppings for this dessert. The strawberry frosting is amazing, like it’s the icing on the cake. I think the topping is my family’s favorite part of this entire recipe. It really helps to bring it all together.

Ingredients
- WALNUT CRUST:
- 1 Cup Walnuts, soaked
- 2/3 Cup Pitted Dates, chopped
- 1 tsp water
- -
- AVOCADO LIME FILLING:
- 2 Large Avocados
- 8 Tbsp Maple Syrup
- 1/2 Lime Juiced
- Lime Zest, to taste
- 1 tsp Vanilla Extract
- 5 Tbsp Coconut oil
- 4 Tbsp Earth Balance Butter

- STRAWBERRY FROSTING:
- 3 Cups Frozen Strawberries
- 1/2 Lime Juiced
- 2 Tbsp Maple Syrup
Instructions
- Food Process Walnut crust into a crumble and pack the mixture into a 6"-8" pan as the base.
- Blend Avocado Lime filling together into a blender until creamy and thick. Pour over the crust in the pan and set into freezer for 4-6 hours.
- After 4-6 hours has completed, blend Strawberry frosting together and pour on top of the cheesecake. Set back into freezer until hardens a bit and serve!
