Time for Greenery!

I really really love my plants.
I can just stare at them, and they make me feel happy, I smile just looking at them! But why am I talking about plants on a Vegan Coffee recipe blog post? Because both of these things provide happiness and peace in my day!

Back to my indoor house plants, I feel safer, even healthier, and more at ease when I tend for and watch hem grow day by day. Not surprisingly, many other people share my same feelings towards these little guys. I’ve found out that a ton of people at my job also have a big plant collection, and a green thumb for propagating. Others who visit our apartment are impressed by the selection we have, and end up asking about planting and wanting a zen space for their selves like this!

And apparently, there are studies to back up the mental benefits we get from my indoor plants. They have found that plants lower stress and anxiety, may boost your outlook in life/work, could sharpen your attention skills and help improve your productivity, and may even help you recover from illnesses faster! But where do you buy these beautiful babies?

To answer where I get my plants from, honestly I get 80% of them from Home Depot. I tend to go there quite frequently for wood when I am working on an at home building project, so I get to scout the plant section often to check for new species.

The other 20% I’ve received off of Ebay in the mail, and my Swiss Cheese Monstera is one I am particularly proud of – he started as just a few leaves, and now he’s grown into a medium sized beautiful plant with multiple propagations that I’ve even given away to friends!

I’m sharing all of this now because we recently remodeled a portion of our livingroom to what you see below! Now we have much more space than we use to. Originally I had our desk right behind the couch, which didn’t allow for much space behind the desk to move.

We shifted the entire 8ft long desk over to the wall on the far left (off of the frame) and made this cozy nook space for our fishtank, cat litter box, plant shelves, and comfy chair, and equipment cabinet. I bought a shag rug off of Amazon and voilà! Now we have this transformed space! What do you guys think of it? Not bad for apartment living!

Now it’s Coffee Time.

So I have to admit, I really don’t drink coffee. It tastes good, especially French vanilla flavored, but my body can’t handle it. I get shaky and have irregular heartbeats from a very small amount of it – even with low caffeine.

But I saw this Whipped Vegan Dalgona Coffee recipe floating around on the internet and just HAD to try it for myself – it looks so good! And to my enjoyment, it tastes very good too, plus it is a delight to eat. I just had to go slow for my body lol! It’s such a treat to make for your spouse or yourself ;P

The ingredients are simple, for most coffee drinkers you probably already have everything you need on your shelf at home. If you aren’t a coffee drinker, perhaps next time I can try substituting it with my favorite Matcha powder.

And honestly, this is so fast to make its ridiculous! I can’t believe I didn’t learn about Dalgona Coffee making sooner! This is definitely a recipe you’re gona want to try at least once!

Does that not look BEAUTIFUL!?

I fell in love! I love all things whipped!! We now own a milk frother (it was a cheap one – so I cannot wait to upgrade it soon) and I love making hot chocolate with it, with my homemade almond milk (I need to post about that next!!). This is no exception, this recipe is all the more better because I get to slurp on some thick and tasty coffee flavored whip cream! UGH, I love it!

The whipped coffee foam will actually remain in tact in the fridge for a few days, so if you made too much or want to save more for later, you can certainly do so with this! Just store it in an airtight container and be careful when handling it 🙂

I hope you guys enjoy. It is a nice ‘coffee break’ once in a while to serve yourself a treat such as this. And it will impress any of your friends when you prepare it for them in a beautiful glass container to see everything mix together. It’s as much fun to watch as it is to eat!

Whipped Vegan Dalgona Coffee

Ingredients

  • 2 Tbsp - Instant Coffee (powdered or granulated)
  • 2 Tbsp - Sugar (granulated cane or white sugar)
  • 2 Tbsp - Filtered Boiling Water
  • 1.5 Cup - Vegan Dairy-free milk (your choice which, but I prefer Oatly for this!)
  • A few ice cubes (atleast 3 per cup)

Instructions

  1. Get a small mixing bowl or large mug and add your coffee, sugar, and boiling water.  
  2. Use an electric hand mixer and beat it for about 3 minutes, or until it becomes foamy and thick!  Then set aside.
  3. Grab the vegan milk of your choice (you can choose whichever milk you want to, coconut/almond/cashew/oat, etc.  I chose Oatly because it was a little more creamy for my liking!) and pour it evenly into two different cups to drink out of.  Make sure there is room on top for your whipped coffee!  Add in a few ice cubes to make it chilled.
  4. Then using a spoon, carefully scoop the amount of whipped coffee you'd like and dab it on-top of your cup of milk.
  5. Stir as you drink it (to mix the flavors together) and enjoy!

Notes

Feel free to save the leftover Dalgona Coffee Whip in an airtight container in the fridge for a few days!

Eases Digestion: Almonds may be delicate to digest because of their hard texture. Soaking almonds overnight softens them making the whole process of digestion a lot easier. Soaking almonds also leads to the release of the enzyme called lipase which stimulates the digestion of fats in the body.
