I love making vegan ice cream. I’ve always enjoyed Chunky Monkey ice cream from Ben and Jerry’s. If you like bananas and chocolate, then this is the right flavor for you!
This is a very easy ice cream you can make at home without a ice cream machine. It consists of bananas, vegan milk, your choice of chocolate (which I chose my favorite vegan stone ground Taza chocolate), dates and maple syrup, and roasted pecans. It makes a lot too (as you can see below). You can substitute the pecans for virtually any type of nuts you want, and you can choose different milks to make this out of like cashew, coconut or almond milk, etc.

Ingredients
- ICE CREAM:
- 4 Bananas - (peeled, chopped and frozen in a baggy)
- 1/2 Cup - Vegan Milk (coconut, almond, cashew, etc)
- 8 - Pitted Dates
- 3 Tbsps - Maple Syrup
- 1 Tbsp - Coconut oil
- 1 Tbsp - Cocoa Powder
- 1 tsp - Lemon Juice
- 1 tsp - Vanilla Extract
- Dash of Cinnamon
- Dash of Sea Salt
- ROASTED PECANS:
- 1 Handful - Pecans
- 2 Tbsp - Maple Syrup
- CHOCOLATE:
- 3-6 oz - Vegan Dark Chocolate Bars
Instructions
- To begin, peel and chop your bananas and freeze them in a plastic baggy.
- Once frozen, toss all of your 'ice cream' ingredients into a high powered blender and blend until smooth and creamy. Transfer into a container (or I used a bread pan).
- Spread out all of your pecans evenly on a lightly oiled aluminum foil over a tray that will fit into your toaster oven. Drizzle the Maple Syrup over the pecans and begin baking for 10 minutes at 350F (keep your eye on them! You don't want them to burn!). Once done, take it out and let it cool.
- Meanwhile, start by splitting your chocolate in half. Crush one half into little pieces that you can sprinkle into the ice cream batter. With the other half, we will begin melting it by putting 2" of water to boil in a small pot and placing the chocolate in a small glass bowl inside above the water. Continue to stir until the chocolate thoroughly melts.
- Toss in your pecans and crushed chocolate mixed into your ice cream, and at the last moment gently stir your melted chocolate to create a nice swirl effect in your ice cream.
- Freeze for 4 hours and enjoy!
