Pistachio Matcha Chocolate Balls

I Love Pistachios & Chocolate!

What better combination than the two together?  Pistachios remind me of my Nonna.  Ever since I was a little girl, we would sit together for hours, just hanging out outside, enjoying the fresh air, pealing apart pistachios and sharing them with each other.  I loved those moments together.  So pistachios are a nut that are quite near and dear to my heart.  And chocolate, I’ve just always loved.  It’s my favorite food Ever.  Then there is matcha powder, which I’ve grown a greater liking to because of its health benefits and the flavor it adds to things.  These balls are a way healthier alternative to the processed truffles you’d find in store, or carb filled sweet desserts.  This is packed with protein thanks to the pistachios and almond flour filling, healthy coconut oil fats, natural sweetening from dates, and good spices like lemon zest and cardamon.  Plus it’s a bite sized snack you can hold yourself over on before lunch or dinner comes, as they keep together really well in the fridge!

I’m sorry I have been MIA, but I have been VERY busy working on an upgrade to our apartment.  We are by no means carpenters, or familiar wood workers, but I am determined, so we tried, practiced and learned as we went.  For 2 months now we’ve ‘put in work’, creating our beautiful dining room table and two benches that slide underneath, a cute farmhouse coffee table, a convenient cozy cat litter box furniture table, two stylish succulent planters, two comfy cat shelves, and painted an accent wall in our living room and a chalkboard wall in our kitchen!!!  I think that’s everything, plus we bought some new pillow cases, and some more Christmas tree lights to decorate our place with.  And I even picked up another little hobby, but I can’t share that yet, because I might be giving them away as Christmas gifts lol! I can’t wait until Christmas 😀

I am proud of each project we did.  I never would have thought we could make our own furniture, and have it be so strong and beautiful.  Praise God for our success!! I think we are done for now, no more major projects, so now I can get back to work, doing my art & photography, and keeping up with my blog here.  Thanks for your patients everybody, I hope everyone had an enjoyable Labor Day! Ingredients

  • FILLING:
  • 1/2 Cup - Shelled Pistachios
  • 10 - Medjool Dates (pitted)
  • 4 Tbsp - Coconut Oil
  • 2 Tbsp - Matcha Powder
  • 1 Cup - Almond Flour
  • 1/2 tsp - Cardamom
  • 1/4 tsp - Lemon Zest
  • Sea Salt

  • 16oz - Dark Chocolate Bar (I use Taza Chocolate)

Instructions

  1. In a large mixing bowl, whisk together your almond flour, matcha powder, cardamom, lemon zest and salt.  Set some pistachios aside for coating.
  2. Using a food processor (if you don't have one, crush the pistachios with a mortar & pestle and chop the medjool dates finely), process your coconut oil, pistachios, and medjool dates until it makes a sticky paste.  Then scoop into your mixing bowl.
  3. Mix your batter together until it forms into soft little balls.  If the batter is too dry, add more coconut oil, if it is too wet, add more almond flour.  Feel free to use your hands and get dirty!  Form into 1.5" balls and place on a tray of parchment paper.  Place into the freezer for 20 minute
  4. Get a small pot and fill it with 1" of water.  Place on the stove on high heat.  As the water is heating up, get a glass or metal bowl (larger than your pot) and place it on top of the pot (make sure it is not touching the water!).  Place your chocolate inside your bowl, and stir it around while it melts.  Once it is completely melted, turn off the stove and let sit.
  5. When the balls have finished chilling, take them out, roll them individually in the melted chocolate to coat them and place them back on the parchment paper.  Crush the pistachios you set aside for coating and sprinkle them on top.  Then stick the balls back in the freezer one last time for 15 minutes to solidify.
  6. Once they have hardened, remove, eat and enjoy!

Notes

Place in the fridge for later use (these last all week long in the fridge!)
