This is an easy to assemble 4 Ingredient Peanut Butter Banana “Nice” Cream.
When I had just gotten out of the hospital from Salmonella poisoning, and was on a limited diet, there were only a few things I could eat. I was not allowed to have dates or honey, because they were high in fiber and the doctors wanted things to pass through me very ‘slowly’ (to give my tired bowels some time to heal and digest properly again). But I was allowed to have things like coconut, ripe banana, peanut butter and a dash of stevia, with minimal chocolate chips on top. After eating bland foods like white rice, crackers, tomato juice, and carrots for weeks, I wanted some chocolate in my life sooo badly!
So I whipped up a batch of this, and man did it taste good! It is so simple, and so customizable, anyone could make this recipe with a blender and 4 simple ingredients. If you are allergic to peanut butter, no worries, try almond butter or soy butter, whatever tickles your fancy! You could also put 1 tsp of vanilla extract in it to give it even more flavor.
Perhaps with the cool nights coming I will be shying away from cold desserts, but for now the temperature has remained in the 60s, so I’m still enjoying the idea of making popsicles and ice cream! Thinking of buying a real ice cream maker some day…
Ingredients
- "NICE" CREAM:
- 2 Frozen - Ripe Bananas
- 1 Can - Coconut Milk
- 4 Tbsp - Peanut Butter
- 2 tsp - Stevia (or sweetener of your choice)
- -
- TOPPINGS (optional):
- Cocoa Nibs
- Dark Chocolate Chunks (I used Taza chocolate bars)
- Melted Peanut Butter
- Coconut Whip
- Melted Chocolate
- Raspberries
- etc 🙂
Instructions
- Freeze your ripe bananas overnight (dice them in cubes and put them in a plastic baggie).
- Place all of your "nice cream" ingredients in a high powered blender and blend on high for 30 seconds.
- Pour into a small container or a bread pan.
- Place in the freezer.
- Every hour, stir until creamy and hardened.
- When firm, scoop out and apply your toppings!
