Take a LOOK at the NEW LOOK!
Hey everybody! I’ve been MIA on the posts lately, but that’s because I’ve spent the last 2 months redesigning my blog from scratch. I mean a total makeover. I am so thankful to all of my friends and family on Facebook, Instagram and Snapchat that helped me pick the right logo and color theme for this new look. My husband is to thank the most though, because I was dead set on having a white background since most other blogs keep it simple white, but he said to be daring, different, and unique. And he was right. Having a new dark theme goes more with my personality, my Photography website, and highlights the food so much more too, which is the reason why you are here right now right? You want to be able to See what you are going to make, how it should look when you are finished making it for yourself, or deciding on if it looks like it tastes good first. So I apologize for being delayed in my recipe postings, but I do have some winners waiting to be shared with you.

…Back to making Vegan Blackberry Icecream
I use to LOVE icecream. I literally gained a few lbs from it in Highschool when I had this bad habit of making myself a melted loaded icecream sunday every night at midnight and eating it in front of the TV right before dinner. I know right, a real picture of health. Don’t worry, I don’t do that anymore lol! But I do sometimes replace this with my dinner…O_o. I try to keep my dinners light, and I feel like this is half berries anyways, so no harm right? hehe. Seriously though, this is a Very simple recipe, that you can customize even more so (add in some superfoods like Goji berries why don’tcha?). If you have a Vitamix, Great! If you have a regular blender, Awesome! If you have an icecream maker, even better! For Christmas this year, Tim bought me an icecream maker (honestly I think he bought it more for himself though, because he uses it way more than me hahaha). Icecream is one of those cheap treats you can give to your guests when they come over for movie night (like we do!) that they will love, or perhaps to make a batch and bring to a family gathering. It is such comfort food, and with no dairy, you don’t need to have the guilt of eating added hormones. Coconut milk still has fat in it though, so if you are trying to loose weight just keep that in mind. You still need some healthy fats in your life though, so just go lighter on your portions. <3
Ingredients
- 1 Cans - Coconut Milk
- 10oz-12oz Bag - Frozen Organic Blackberries
- 1 Lemon - Zested
- 2-3 Tbsp - Maple Syrup
- 10oz - Dark Chocolate Bar (or Dark Chocolate Chips)
- Pinch of Sea Salt
Instructions
- Start off by blending everything but your chocolate in a high powered blender for a solid minute (you can pulse at the beginning and end to make sure everything is fully chopped up). If you want to to maintain a more 'natural' berry texture (where you still have the berry seeds for added crunch), don't over-blend (if you taste the batter, you will be able to tell if you still have the seeds in tact or not).
- Chop up your chocolate and keep aside if you are using an icecream maker.
- If you are using an icecream maker, begin pouring your batter into the machine and turn it on. Let it go for 15 minutes or so, and as it goes, toss in your chocolate chunks.
- If you are not using an icecream maker, mix your chocolate chunks into a container (a bread pan works well), stir well and place in the freezer with foil over top for the next 3 hours. Set a timer for yourself every 30 minutes to take it out and churn it.
- Once it is finished, keep it stored in the freezer and place out an hour before so you can easily scoop out when you are ready to enjoy it!

This has lasted me almost a month in the freezer with no issues.
